Eggless Banana Bread

Ingredients Ripe banana – 3 no.s Powdered sugar – 3/4th cup Vegetable Oil- 1/2 cup Vanilla extract – 1tsp Wheat flour – 3/4th cup All purpose flour – 3/4th cup Baking powder – 1tsp Baking soda – 1tsp Salt – a pinch Milk – 1/4th cup Method In a bowl add peeled and cut bananas & mash them with the help of fork. Now add powdered sugar & beat. Add vegetable oil & vanilla extract. Beat again. Sift wheat flour, all purpose flour, baking powder, baking soda, salt. Beat it until smooth. Add milk and again beat. Shift the batter into well greased loaf tin, pat twice. Preheat and bake at 180c for 40 minutes.

Eggless Chocolate Cupcakes

Ingredients Flour – 3/4th cup Baking soda – 1/2tsp Cocoa powder – 3tbsps Powdered sugar – 1/2 cup Milk – 1/2 cup Vegetable oil – 1/3rd cup Vinegar – 1/2tsp Chocolate chips – 1/4th cup Butter cream icing Powdered sugar – 200gms Cocoa powder – 1/2 cup Butter (Salted) – 100gms Milk – 1tsp Method Sift Flour, baking soda and cocoa powder, mix it in a bowl. Add sifted powdered sugar to the same bowl and mix. Keep it aside. In another bowl add milk,oil and vinegar, mix it well. To this add dry ingredients in 3 batches and combine it well. Add 2tsp milk to the mixture if your batter becomes dry. Batter should be flowing consistency. Now add choco chips and mix. Pour the batter into cupcake molds. I am using silicone molds. So I don’t need to grease the molds. Preheat and bake at 180c for 15- 25 minutes. After baking demold it and cool them completely. For butter cream icing sift powdered sugar and cocoa powder in bowl.
